Ingredients
Scale
The key to this dish lies in selecting the right ingredients that offer both flavor and quality. I recommend choosing fresh, free-range eggs and a good quality, thick-cut bacon for the best taste. Here’s what you’ll need:
- 6 large eggs
- 6 slices of thick-cut bacon
- 1 cup shredded cheddar cheese
- 4 large flour tortillas
- 1/4 cup milk
- Salt and pepper to taste
- 1 tablespoon butter
- Optional: salsa, avocado, or hot sauce for serving
Instructions
- In a large skillet, cook the bacon over medium heat until crispy. Transfer to a paper towel-lined plate to drain.
- In a bowl, whisk together the eggs, milk, and a pinch of salt and pepper.
- Heat the butter in a non-stick skillet over medium-low heat. Add the egg mixture and cook, stirring gently, until soft curds form.
- Warm the tortillas in a dry skillet or microwave to make them pliable.
- Assemble the burritos by laying a tortilla flat, adding a portion of eggs, a couple of bacon slices, and a sprinkle of cheese.
- Fold in the sides of the tortilla, then roll it up tightly from the bottom. Repeat with remaining ingredients.
- Optional: Toast the burritos in a skillet for a minute on each side to crisp the tortilla slightly.
