- 1 pound boneless, skinless chicken thighs

Instructions
- Slice the chicken thighs into bite-sized pieces. Coat them with cornstarch, ensuring each piece is evenly covered.
- Heat a large pan over medium-high heat with a splash of oil. Cook the chicken pieces in batches, ensuring not to overcrowd the pan, until golden brown and cooked through, about 5-6 minutes per batch. Remove and set aside.
- In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and soy sauce until smooth. This will be your creamy sauce.
- Assemble your bowls with a base of jasmine rice, topped with shredded cabbage and the crispy chicken.
- Drizzle generously with the prepared creamy sauce and garnish with green onions and sesame seeds.
