  • 1 cup dried butter beans (or 2 cans, drained and rinsed)

Instructions

  1. If using dried butter beans, soak them overnight in plenty of water. Drain and rinse before cooking. If using canned, simply drain and rinse.

  3. Add the minced garlic and smoked paprika. Stir for 1 minute until the spices bloom and release their aroma.
  4. Pour in the vegetable stock and add the butter beans along with fresh thyme sprigs. Bring to a boil, then reduce heat to a simmer.
  5. Cover and let the soup simmer gently for 45 minutes (or 20 minutes if using canned beans), until beans are tender and flavors meld beautifully. Stir occasionally to prevent sticking.
  6. Remove thyme sprigs. Using an immersion blender, partially puree the soup to create a creamy texture while leaving some beans whole for bite.
