Ingredients

Scale

The key to this dish lies in selecting the right ingredients—fresh shrimp, good-quality pasta, and a spice mix that hits all those smoky, spicy notes. When I first started making Cajun dishes, I was tempted to use pre-made seasoning blends, but I quickly learned that mixing your own gives you control over heat and flavor balance. Also, choosing fresh garlic and ripe tomatoes makes a noticeable difference in the sauce’s depth. Here’s what you’ll want to gather:

  • 12 ounces linguine or fettuccine pasta
  • 1 pound large shrimp, peeled and deveined
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon smoked paprika
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1/2 teaspoon cayenne pepper (adjust to taste)
  • 1 teaspoon onion powder
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup diced tomatoes (canned or fresh)
  • 2 tablespoons butter
  • Fresh parsley, chopped, for garnish

Substitution tip: If you’re short on heavy cream, half-and-half can work in a pinch, though the sauce will be lighter. For a gluten-free option, swap the pasta for your favorite GF noodles.

Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package instructions until al dente. Drain and set aside, reserving 1/2 cup of pasta water.
  2. In a small bowl, combine smoked paprika, oregano, thyme, cayenne, onion powder, black pepper, and salt to create your Cajun seasoning blend.
  3. Pat the shrimp dry and toss them with half of the Cajun seasoning to coat evenly.
  4. Heat olive oil in a large skillet over medium-high heat. Add shrimp and cook for 2-3 minutes per side until pink and cooked through. Remove shrimp and set aside.
  5. In the same skillet, add butter and sauté garlic until fragrant, about 30 seconds. Stir in diced tomatoes and remaining Cajun seasoning. Cook for 2 minutes to meld flavors.
  6. Pour in the heavy cream and bring to a gentle simmer. Let it thicken slightly, about 3-4 minutes, stirring occasionally.
  7. Add Parmesan cheese and stir until melted and sauce is creamy. If the sauce feels too thick, add reserved pasta water a tablespoon at a time to reach desired consistency.
  8. Return shrimp to the skillet along with the cooked pasta. Toss everything together to coat evenly in the sauce. Heat through for 1-2 minutes.
  9. Serve garnished with fresh parsley for a pop of color and brightness.
