The key to this dish lies in selecting the right ingredients, especially fresh spinach and good-quality chicken. I find that using fresh baby spinach gives the casserole a delicate flavor and lovely texture, while leftover roasted chicken or even rotisserie chicken works beautifully to save time without sacrificing taste. When it comes to cheese, I lean towards a sharp cheddar or mozzarella for that melty, golden crust that always wins over my kids.
- 3 cups cooked chicken, shredded or diced (about 2 large breasts)
- 4 cups fresh baby spinach, roughly chopped
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 cup sour cream or Greek yogurt (for a lighter option)
- 1/2 cup mayonnaise
- 1/2 cup grated Parmesan cheese
- 1/2 cup chicken broth
- 1 tablespoon olive oil or butter
- 1 teaspoon dried thyme or Italian seasoning
- Salt and freshly ground black pepper, to taste
- Optional: 1/2 cup sliced mushrooms or chopped bell peppers for extra veggies
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a medium baking dish with olive oil or butter.
- Heat olive oil in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 4 minutes.
- Add the minced garlic and cook for another 30 seconds until fragrant.
- Stir in the fresh spinach (and optional mushrooms or peppers if using). Cook until wilted, about 3-4 minutes. Season with salt, pepper, and dried thyme.
- In a large bowl, combine the cooked chicken, sautéed veggies, sour cream (or Greek yogurt), mayonnaise, half of the cheddar and mozzarella cheeses, Parmesan, and chicken broth. Mix until everything is evenly incorporated.
- Pour the mixture into your prepared baking dish and spread it out evenly.
- Sprinkle the remaining cheddar and mozzarella cheeses on top for a golden, bubbly crust.
- Bake uncovered for 25-30 minutes, or until the casserole is hot and the cheese is melted and starting to brown.
- Remove from oven and let it rest for 5 minutes before serving. This helps the casserole set and makes it easier to portion.
