Ingredients
The key to this dish lies in selecting the right ingredients—fresh, quality produce makes all the difference. I always pick ripe avocados that give just a gentle yield to the touch, and I prefer using a good melting cheese like Monterey Jack or mild cheddar for that perfect ooze. For the chicken, leftover roasted chicken or a quick pan-seared breast works beautifully. It’s a recipe that welcomes substitutions, so feel free to swap out the bread for a gluten-free option or the cheese for a dairy-free alternative if needed.
- 2 cooked chicken breasts, sliced thinly
- 1 ripe avocado, peeled and sliced
- 4 slices of bread (sourdough or your favourite sandwich bread)
- 4 slices of Monterey Jack or cheddar cheese
- 1 tablespoon mayonnaise (optional, for extra creaminess)
- 1 teaspoon lemon juice (to keep the avocado fresh and bright)
- Salt and freshly ground black pepper, to taste
- Butter or olive oil, for toasting the bread
- Optional: handful of fresh spinach or arugula for a peppery bite
Instructions
- Start by slicing your cooked chicken breasts thinly—this helps the sandwich layer evenly without being too bulky.
- In a small bowl, gently toss the avocado slices with lemon juice, salt, and pepper to keep them fresh and vibrant.
- Spread a thin layer of butter or olive oil on one side of each bread slice for toasting.
- Heat a skillet over medium heat and toast the bread slices, buttered side down, until golden and crisp, about 2-3 minutes.
- Flip the bread, then layer on the cheese slices immediately so they start melting. Top with chicken slices and avocado.
- If you’re adding greens like spinach or arugula, place them on top of the avocado for a pop of freshness.
- Top with the remaining bread slice, buttered side up, and press down gently with a spatula.
- Cook for another 2-3 minutes, flipping carefully if needed, until the cheese is melted and the sandwich is heated through.
- Remove from heat, slice in half, and serve warm—preferably with your favourite dipping sauce or side.
