Instructions

  1. Start by patting the chicken breasts dry with paper towels. This helps get a nice sear. Season both sides generously with salt, pepper, and smoked paprika.
  2. Heat 1 tablespoon of olive oil in a large skillet over medium-high heat. Once hot, add the chicken breasts. Cook undisturbed for 5-6 minutes until golden brown on one side.
  3. Flip the chicken and cook for another 5 minutes, or until cooked through (internal temperature should reach 165°F). Remove the chicken from the pan and set aside to rest—this keeps the juices locked in.
  4. In the same skillet, add the remaining tablespoon of olive oil. Toss in the minced garlic and sauté for about 30 seconds until fragrant, but not browned.
  5. Add the green beans, season lightly with salt and pepper, and cook, stirring occasionally, for 5-7 minutes until tender but still crisp. If you like, sprinkle in red chili flakes here.
  6. Return the chicken to the skillet, nestling it amongst the green beans. Drizzle with fresh lemon juice and toss gently to combine all the flavours.
  7. Cook for an additional minute to warm everything through, then garnish with chopped parsley before serving.
