  • 1 turkey breast, about 2 pounds
  • 1 cup fresh cranberries
  • 1/2 cup orange juice
  • 1/4 cup honey

  • 1 teaspoon orange zest
  • Salt and pepper to taste

If fresh cranberries are hard to come by, frozen ones will work just as well. A little tip from my kitchen—always grate the zest before juicing the orange to capture all the vibrant oils.

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking dish with foil for easy cleanup.
  2. In a small saucepan, combine cranberries, orange juice, honey, and orange zest. Bring to a simmer over medium heat, cooking until the cranberries burst and the mixture thickens, about 10 minutes.
  3. Remove from heat and stir in Dijon mustard. Season with salt and pepper.
  4. Rub the turkey breast with olive oil, then season generously with salt and pepper.
  5. Place the turkey in the prepared baking dish and brush half of the cranberry-orange glaze over it.
  6. Roast in the preheated oven for 1 to 1.5 hours, basting with remaining glaze every 30 minutes, until the internal temperature reaches 165°F (74°C).
  7. Let the turkey rest for 10 minutes before slicing, allowing the juices to redistribute.
