- 12 oz of pasta (penne or fettuccine work well)
- 1 lb of boneless, skinless chicken breasts
- 2 tablespoons of Cajun seasoning (homemade or store-bought)
- 2 tablespoons of olive oil
- 1 cup of heavy cream
- 1 cup of chicken broth
- 1 bell pepper, sliced
- 1 onion, sliced
- 3 cloves of garlic, minced
- 1 cup of grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Boil pasta in a large pot of salted water until al dente. Drain and set aside.
- Season the chicken with Cajun seasoning, ensuring an even coat.
- In a large skillet, heat olive oil over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 7-8 minutes per side. Remove and set aside.
- In the same skillet, add bell pepper, onion, and garlic. Sauté until the vegetables are tender.
- Pour in the heavy cream and chicken broth, stirring to combine. Let it simmer for 3-4 minutes until slightly thickened.
- Slice the cooked chicken and return it to the skillet. Add the cooked pasta and Parmesan cheese, stirring until everything is well coated.
- Season with salt and pepper to taste. Garnish with fresh parsley before serving.
