  • 1 cup ricotta cheese
  • 1 cup shredded mozzarella cheese

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the Italian sausage, breaking it up with a wooden spoon, and cook until browned and cooked through, about 6-8 minutes. If you’re making this vegetarian, skip this step and start with the onion.
  2. Add the chopped onion to the pot and sauté until translucent, about 4 minutes. Stir in the minced garlic, oregano, and red pepper flakes, cooking for another minute until fragrant.
  3. Pour in the crushed tomatoes and broth, bringing the mixture to a simmer. Season with salt and pepper to taste.
  4. Add the uncooked pasta directly into the pot. Simmer uncovered, stirring occasionally, until the pasta is tender—usually 10 to 12 minutes, depending on the shape you’ve chosen. Keep an eye on the liquid level and add a splash of broth if needed.
  5. Once the pasta is cooked, reduce the heat to low and stir in the heavy cream, ricotta, mozzarella, and Parmesan. Mix gently until the cheese melts and the soup is creamy and luscious.
