- 12 oz rigatoni pasta
- 1 lb Italian sausage (casings removed)
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup heavy cream (or half-and-half for lighter sauce)
- 1/2 cup grated Parmesan cheese
- 1 cup crushed tomatoes or tomato sauce
- 2 tablespoons olive oil
- Salt and freshly ground black pepper, to taste

Instructions
- Bring a large pot of salted water to a boil and cook the rigatoni according to package instructions until al dente. Drain, reserving about ½ cup of pasta water, and set aside.
- While the pasta cooks, heat olive oil in a large skillet over medium heat. Add the sausage, breaking it up with a wooden spoon. Cook until browned and cooked through, about 6-8 minutes.
- Add the chopped onion to the skillet and sauté until softened, around 3-4 minutes, then stir in the minced garlic and cook for another minute until fragrant.
- Pour in the crushed tomatoes and stir to combine. Let the mixture simmer gently for 5 minutes to deepen the flavors.
- Reduce heat to low and stir in the heavy cream and Parmesan cheese. Allow the sauce to thicken slightly, about 3 minutes. Season with salt and pepper to taste.
- Add the cooked rigatoni directly into the skillet with the sauce. Toss to coat the pasta evenly, adding reserved pasta water a little at a time if needed to loosen the sauce.
- Remove from heat, garnish with chopped fresh basil or parsley, and serve immediately.
