If you’re short on time, canned diced tomatoes work beautifully, but if you can find fresh, even better. Here’s what you’ll need:

  • 2 large boneless, skinless chicken breasts
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 1 can (14 oz) diced tomatoes, preferably fire-roasted
  • 4 cups low-sodium chicken broth
  • 1 cup heavy cream or half-and-half (substitute with coconut cream for dairy-free)
  • 1 cup grated Parmesan cheese, plus extra for garnish
  • 1 teaspoon dried Italian seasoning
  • 1/2 teaspoon crushed red pepper flakes (optional, for a gentle kick)
  • Salt and freshly ground black pepper to taste
  • 2 cups fresh baby spinach or kale (optional, for added greens)
  • 2 tablespoons olive oil

Instructions

  1. Heat olive oil in a skillet over medium heat. Add the chopped onion and cook until softened, about 4 minutes. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  2. Transfer the sautéed onions and garlic to your slow cooker. Place the chicken breasts on top.
  3. Add the diced tomatoes (with juices), chicken broth, Italian seasoning, and red pepper flakes if using. Season lightly with salt and pepper.
  4. Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the chicken is tender and cooked through.
  5. Remove the chicken breasts and shred them using two forks. Return the shredded chicken to the slow cooker.
  6. Stir in the heavy cream and Parmesan cheese until melted and creamy. If using, add the fresh spinach or kale and cook for an additional 10 minutes until wilted.
