  • 4 bone-in, skin-on chicken thighs (about 1.5 pounds)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 cups low-sodium chicken broth
  • 1 cup whole milk or heavy cream (substitute with almond milk for dairy-free)
  • 3 tablespoons all-purpose flour
  • 2 tablespoons unsalted butter
  • 1 teaspoon dried thyme (or 1 tablespoon fresh thyme leaves)
  • Salt and freshly ground black pepper, to taste
  • 2 tablespoons olive oil or vegetable oil
  • Optional: 1/2 cup sliced mushrooms for added earthiness

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Season the chicken thighs generously with salt and pepper.
  2. Sear the chicken, skin-side down first, until golden brown and crisp, about 4-5 minutes per side. This step adds flavor and texture, so don’t skip it.
  3. Remove chicken and set aside. In the same skillet, reduce heat to medium and sauté the chopped onion and garlic until translucent and fragrant, about 3 minutes.
  4. Add butter and sprinkle the flour over the onions, stirring constantly to form a roux. Cook for about 2 minutes to eliminate the raw flour taste.
  5. Slowly whisk in the chicken broth, stirring to avoid lumps, then add thyme. Let the mixture simmer gently until slightly thickened, about 3-4 minutes.
