The key to this dish lies in selecting the right ingredients—fresh, quality produce and pantry staples that build deep flavor over time. When I moved from England to the US, I learned to appreciate how ingredient quality can vary, so I always opt for fresh chicken and good-quality broth to make sure the slow cooker brings out the best in every bite. - 1.5 pounds boneless, skinless chicken breasts
- 4 cups low-sodium chicken broth
- 1 cup heavy cream or half-and-half (substitute with coconut cream for dairy-free)
- 1 (10-ounce) package cheese tortellini (fresh or frozen works well)
- 3 cloves garlic, minced
- 1 medium onion, finely chopped
- 1 cup grated Parmesan cheese
- 2 cups fresh spinach, roughly chopped (optional but recommended)
- 1 teaspoon dried Italian seasoning or a mix of oregano and basil
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil or butter
Instructions
- Start by heating olive oil or butter in a skillet over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in the minced garlic and cook for another minute until fragrant.
- Place the chicken breasts in the CrockPot. Pour in the sautéed onion and garlic along with the chicken broth and Italian seasoning. Season with salt and pepper.
- Cover and cook on low for 4-5 hours, or on high for 2-3 hours, until the chicken is fully cooked and tender.
- Remove the chicken from the slow cooker and shred it using two forks. Return the shredded chicken to the pot.
- Stir in the heavy cream and Parmesan cheese until the sauce becomes creamy and slightly thickened.
- Add the tortellini and chopped spinach to the CrockPot. Stir gently to combine, then cover and cook on high for an additional 20-30 minutes, or until the tortellini is tender but not mushy.
- Give the dish a final stir, adjust seasoning if needed, and serve hot.
