- 1 cup shredded sharp cheddar cheese
- 1/2 cup sour cream
- 1/2 cup beef broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 teaspoon smoked paprika
- 1/2 teaspoon dried thyme
- Salt and freshly ground black pepper, to taste
- 2 tablespoons olive oil or butter
- Optional: chopped chives or green onions for garnish
Instructions
- Begin by seasoning the steak pieces with salt, pepper, smoked paprika, and thyme. This simple rub enhances the beef’s natural flavour and adds a smoky warmth that fills your kitchen.
- Heat olive oil or butter in a skillet over medium-high heat and quickly sear the steak pieces for 1-2 minutes per side. You’re looking for a golden crust, not cooked through—this step locks in the juices.
- In the crockpot, layer half of the sliced potatoes, followed by half of the chopped onions and garlic. Sprinkle some salt and pepper over the layers for seasoning.
- Place the seared steak over the potatoes, then add the remaining potatoes, onions, and garlic in layers. Pour the beef broth evenly over the top to keep everything moist during cooking.
- Cover and cook on low for 6-7 hours or on high for 3-4 hours, until the potatoes are tender and the steak is cooked to your liking.
- About 15 minutes before serving, stir in the sour cream and sprinkle the shredded cheddar cheese over the top. Replace the lid and allow the cheese to melt and the sour cream to warm through.
- Garnish with fresh chives or green onions if you like, then serve straight from the crockpot for a cozy, no-fuss dinner.
