Ingredients
Choosing quality ingredients makes all the difference in this dish. I always opt for fresh kielbasa from a trusted butcher or deli, and when it comes to pierogi, homemade is a dream, but store-bought works just as well for weeknight ease. Fresh onions and a touch of sour cream add layers of flavor that elevate the whole casserole. Over the years, I’ve learned that simple, fresh ingredients bring out the best in this recipe—no need to overcomplicate.
- 1 pound kielbasa, sliced into ½-inch rounds
- 1 package (about 20 ounces) frozen cheese pierogi, thawed
- 1 large onion, thinly sliced
- 1 red bell pepper, sliced
- 2 cups shredded sharp cheddar cheese
- 1 cup sour cream
- 1 can (10.5 ounces) cream of mushroom soup
- 2 cloves garlic, minced
- 2 tablespoons butter
- Salt and pepper to taste
- Fresh parsley, chopped (optional, for garnish)
Instructions
- Begin by sautéing the sliced kielbasa in butter over medium heat until it’s lightly browned and fragrant, about 5 minutes. This step adds depth and caramelization that you just can’t get from the slow cooker alone.
- Remove the kielbasa and, in the same pan, sauté the onions, red bell pepper, and garlic until softened and slightly golden, roughly 6-7 minutes. The sweet aroma at this stage is one of my favorite kitchen moments.
- In a large bowl, mix together the sour cream and cream of mushroom soup until smooth. Season lightly with salt and pepper.
- Layer half of the thawed pierogi in the bottom of your crockpot, then add half of the kielbasa and sautéed veggies over the top.
- Spread half the sour cream and mushroom mixture evenly over the layers, then sprinkle with half the shredded cheddar cheese.
- Repeat the layers with the remaining pierogi, kielbasa, veggies, sour cream mixture, and cheese.
- Cover and cook on low for 3-4 hours or on high for 2 hours, until the pierogi are tender and the cheese is melted and bubbly.
- Before serving, garnish with fresh parsley for a pop of color and freshness.
