Instructions

  1. Start by browning the sausage in a skillet over medium heat. Break it up with a wooden spoon until cooked through, about 5-7 minutes. This step adds depth of flavor, so don’t skip it.
  2. Add the chopped onion and garlic to the skillet and sauté for another 2-3 minutes until softened and fragrant.
  3. Transfer the sausage mixture to your crockpot. Stir in the chicken broth, diced tomatoes with their juice, and dried Italian seasoning.
  4. Cover and cook on low for 4-5 hours or on high for 2-3 hours, allowing the flavors to meld beautifully.
  5. About 20 minutes before serving, stir in the tortellini and chopped spinach or kale. Cover and continue cooking until the tortellini is tender, usually around 15-20 minutes.
  6. Season with salt and pepper to taste. If desired, sprinkle Parmesan cheese over each bowl just before serving for that extra comforting touch.
