Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a 9-inch round or square baking dish.
- Arrange two tortillas at the bottom of the dish, overlapping slightly to cover the base completely. This forms your crust.
- In a large bowl, whisk together the eggs, milk, salt, pepper, and dried oregano until smooth and slightly frothy.
- Layer half of the cheese evenly over the tortilla base, then scatter the diced bell peppers, spinach, onion, and cooked meat (if using).
- Pour half of the egg mixture over the fillings, then add the remaining tortillas on top, slightly overlapping to cover.
