- 6 large eggs

Instructions
- Start by heating a skillet over medium heat. Remove the sausage from its casing (if using links) and crumble it into the pan. Cook until browned and cooked through, about 6-8 minutes, stirring occasionally.
- While the sausage cooks, whisk the eggs with smoked paprika, salt, and pepper in a bowl until just combined.
- Once the sausage is done, transfer it to a plate lined with paper towels to drain excess fat. Leave a teaspoon of drippings in the pan.
- Pour the eggs into the same skillet and cook gently, stirring occasionally, until just set but still moist, about 2-3 minutes. Remove from heat.
- Combine the cooked sausage, scrambled eggs, diced bell peppers, onions, and shredded cheese in a bowl. Mix gently to distribute evenly.
- Warm the tortillas briefly in a dry skillet or microwave to make them pliable.
- Place about 2-3 tablespoons of the filling near one edge of each tortilla. Roll tightly into a cigar shape, tucking in the sides as you go.
- Heat about 1/4 inch of oil in a skillet over medium-high heat. Fry the taquitos seam-side down first, turning occasionally, until golden brown and crispy on all sides, about 2-3 minutes per side.
