The key to this dish lies in selecting the right ingredients, especially when it comes to the shrimp and garlic. Butter is essential here for that silky sauce, but a splash of olive oil helps balance it out. When choosing pasta, I lean towards linguine or spaghetti because they hold the sauce beautifully.   • 8 ounces linguine or spaghetti
  • 1 pound large shrimp, peeled and deveined
  • 4 tablespoons unsalted butter
  • 2 tablespoons olive oil
  • 4 cloves garlic, minced

  • Juice of 1 lemon
  • 1/4 cup fresh parsley, chopped

Instructions

  1. Bring a large pot of salted water to a boil. Cook the pasta according to package instructions until al dente, usually about 8-10 minutes. Drain and set aside, reserving about 1/2 cup of pasta water.
  2. While the pasta cooks, heat the olive oil and 2 tablespoons of butter in a large skillet over medium heat.
  3. Add the minced garlic and red pepper flakes (if using). Sauté for about 1-2 minutes until fragrant, being careful not to burn the garlic.
  4. Increase the heat to medium-high and add the shrimp. Season with salt and pepper. Cook for 2-3 minutes on each side until they turn pink and opaque.
  5. Reduce heat to low, add the remaining butter, and squeeze in the lemon juice. Stir to combine and melt the butter fully.
  6. Add the cooked pasta to the skillet, tossing everything together. If the sauce feels too thick, add reserved pasta water a tablespoon at a time to loosen it.
  7. Stir in chopped parsley and adjust seasoning as needed.
  8. Serve immediately with a sprinkle of Parmesan cheese if desired.
