Ingredients
Scale
The key to this dish lies in selecting the right ingredients, balancing freshness with quality to bring out the best flavors. Here’s what you’ll need:
- 1 head of cauliflower, cut into florets
- 2 cups mushrooms, sliced (button or cremini work well)
- 3 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon thyme (fresh or dried)
- Salt and pepper to taste
- 1/4 cup grated Parmesan cheese (optional)
- 1 teaspoon lemon juice
If you’re feeling adventurous, swap the Parmesan for a vegan cheese or add a sprinkle of red pepper flakes for a bit of heat.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the mushrooms and sauté until they are golden brown and have released their moisture, about 5 minutes.
- Add the garlic to the skillet, stirring frequently to prevent burning, and cook for an additional 1-2 minutes.
- Add the cauliflower florets and thyme to the skillet, tossing everything to combine. Season with salt and pepper.
- Cover the skillet and let the cauliflower steam for about 8-10 minutes, stirring occasionally, until it is tender but still has a slight bite.
- Uncover the skillet and increase the heat to medium-high to allow any excess moisture to evaporate. Stir in the lemon juice and Parmesan cheese, if using.
- Serve hot, garnished with extra Parmesan or fresh herbs, if desired.
