The key to this dish lies in selecting the right ingredients—fresh, quality produce and good Parmesan cheese make all the difference. Growing up, my mum always emphasized the importance of fresh garlic, so I never skip it here. When it comes to chicken, I prefer ground chicken thighs for their richer flavor and juiciness, but you can use breast if you want to keep it extra lean. - 1 ½ pounds ground chicken (preferably thighs for more flavor)
- 1 cup fresh breadcrumbs (or rolled oats as a substitute)
- 1 large egg
- ½ cup grated Parmesan cheese
- 3 cloves garlic, minced
- ½ cup finely chopped onion
- ¼ cup milk (any kind works, including plant-based)
- 2 tablespoons fresh parsley, chopped (optional but recommended)
- 1 teaspoon dried Italian seasoning
- Salt and freshly ground black pepper, to taste
- ½ cup marinara sauce or ketchup for topping
Instructions
- Preheat your oven to 375°F (190°C). Lightly grease a loaf pan or line it with parchment paper for easy cleanup.
- In a large bowl, combine the ground chicken, breadcrumbs, grated Parmesan, minced garlic, chopped onion, egg, milk, parsley, and Italian seasoning.
- Season generously with salt and freshly ground black pepper. I like to add a little extra pepper here for a subtle kick.
- Using your hands or a spoon, mix everything gently but thoroughly. Be careful not to overwork the meat to keep the loaf tender.
- Transfer the mixture into the prepared loaf pan, pressing it down evenly but not too tightly. A light touch keeps the texture nice and soft.
- Spread the marinara sauce or ketchup evenly over the top. This layer helps keep the meatloaf moist and adds a tangy glaze.
- Bake for 45-50 minutes, or until the internal temperature reaches 165°F (74°C). The edges should be golden, and the topping slightly caramelized.
- Let the meatloaf rest for 10 minutes before slicing. This step is crucial—it allows the juices to redistribute, making each slice juicy and flavorful.
