- 1.5 pounds boneless, skinless chicken breasts, cut into 1.5-inch cubes

- Wooden or metal skewers (soaked in water if wooden)
Substitutions: For a gluten-free option, swap the breadcrumbs with crushed cornflakes or almond meal. You can also experiment with Pecorino Romano in place of Parmesan for a sharper edge.
Instructions
- Start by soaking wooden skewers in water for at least 30 minutes to prevent burning. If you’re using metal skewers, you can skip this step.
- In a large bowl, combine the minced garlic, grated Parmesan, breadcrumbs, olive oil, dried herbs, salt, and pepper. Mix well until you get a coarse, fragrant coating.
- Add the cubed chicken pieces to the bowl and toss gently until each piece is well coated. Let the chicken marinate for 10-15 minutes at room temperature, which helps the flavors meld.
- Thread the chicken cubes onto the skewers, leaving a little space between pieces for even cooking.
- Preheat your grill or grill pan to medium-high heat. Lightly oil the grates to prevent sticking.
- Grill the skewers for about 4-5 minutes per side, turning carefully to avoid losing the Parmesan crust. The chicken should reach an internal temperature of 165°F (75°C) and be nicely charred on the edges.
- Remove from heat and let the skewers rest for a couple of minutes. This helps keep the chicken juicy.
