If you’re looking to substitute, whole wheat or gluten-free pasta works well here. And if you don’t have fresh parsley, dried herbs can do in a pinch, although they won’t provide the same fresh lift.

Instructions

  1. Bring a large pot of salted water to a boil. Add the spaghetti and cook according to package instructions until al dente, usually about 8-10 minutes.
  2. While the pasta cooks, heat the olive oil in a large skillet over medium heat. Add the sliced garlic and red pepper flakes (if using), stirring frequently to avoid burning. Cook until the garlic is golden and fragrant, about 2-3 minutes.
  3. Once the pasta is cooked, reserve about 1 cup of the pasta water and then drain the spaghetti.
  4. Add the drained spaghetti to the skillet with garlic oil. Toss to coat evenly, adding reserved pasta water a little at a time to loosen the sauce and help it cling to the noodles.
  5. Season with salt and freshly ground black pepper to taste. Stir in the chopped parsley and lemon juice if using, giving the pasta a fresh, vibrant finish.
  6. Serve immediately with a generous sprinkle of grated Parmesan cheese on top, if desired.
