Instructions

  1. Heat the olive oil in a large skillet or sauté pan over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
  2. Add the ground beef to the pan, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 6-7 minutes. Season with salt, pepper, and oregano as it cooks.
  3. Stir in the tomato paste and diced tomatoes, mixing well to combine. Let this cook for 2-3 minutes to deepen the flavors.
  4. Add the orzo pasta to the pan, stirring to coat it in the sauce. Pour in the beef broth and bring everything to a gentle boil.
  5. Reduce the heat to low, cover the pan, and let it simmer for about 12-15 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
