- 1 pound lean ground beef
- 1 cup orzo pasta
- 1 small onion, finely chopped
- 3 cloves garlic, minced
- 1 cup diced tomatoes (canned or fresh)
- 2 ½ cups beef broth
- 1 tablespoon tomato paste
- 1 teaspoon dried oregano (or 1 tablespoon fresh, chopped)
- Juice of 1 lemon
- 2 tablespoons olive oil
- Salt and pepper, to taste
- Optional: ½ cup crumbled feta cheese
- Optional garnish: chopped fresh parsley or mint
Instructions
- Heat the olive oil in a large skillet or sauté pan over medium heat. Add the chopped onion and garlic, cooking until softened and fragrant, about 3-4 minutes.
- Add the ground beef to the pan, breaking it up with a wooden spoon. Cook until browned and no longer pink, about 6-7 minutes. Season with salt, pepper, and oregano as it cooks.
- Stir in the tomato paste and diced tomatoes, mixing well to combine. Let this cook for 2-3 minutes to deepen the flavors.
- Add the orzo pasta to the pan, stirring to coat it in the sauce. Pour in the beef broth and bring everything to a gentle boil.
- Reduce the heat to low, cover the pan, and let it simmer for about 12-15 minutes, or until the orzo is tender and most of the liquid is absorbed. Stir occasionally to prevent sticking.
- Once the orzo is cooked, remove the pan from heat. Stir in the fresh lemon juice and adjust seasoning as needed. If using, fold in the crumbled feta cheese for a creamy finish.
- Garnish with chopped parsley or mint before serving to add a fresh pop of color and flavor.
