- 2 large sweet potatoes, peeled and grated
- 1/4 cup chopped onion
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1/2 teaspoon garlic powder
- Salt and pepper to taste
Instructions
- Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the grated sweet potatoes, chopped onion, olive oil, smoked paprika, garlic powder, salt, and pepper. Toss until all ingredients are well coated.
- Scoop small mounds of the mixture onto the prepared baking sheet, pressing gently to flatten each into a patty shape.
- Bake for 15-20 minutes, flipping halfway through, until the edges are crisp and golden brown.
- Remove from the oven and let cool slightly before serving.
