Ingredients
Scale
The key to this dish lies in selecting the right ingredients that bring out the best in each flavor profile. Freshness is paramount, especially when it comes to sweet potatoes and beef. Remembering my grandmother’s advice, I always choose high-quality, locally sourced produce whenever possible.
- 1 pound ground beef
- 2 large sweet potatoes, peeled and diced
- 2 tablespoons olive oil

- 1/4 cup hot honey
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- 1/2 cup chopped fresh parsley
- 1 tablespoon apple cider vinegar
Instructions
- Preheat your oven to 400°F. Spread the diced sweet potatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper.
- Roast the sweet potatoes for 25-30 minutes, until tender and slightly caramelized.
- Meanwhile, in a large skillet, cook the ground beef over medium heat until browned, about 8-10 minutes. Drain excess fat.
- Add minced garlic and smoked paprika to the beef, stirring for another 2 minutes until fragrant.
- Stir in the hot honey and apple cider vinegar, letting it simmer for 3-4 minutes to meld the flavors.
- Combine the roasted sweet potatoes with the beef mixture and toss gently to coat everything evenly.
- Serve hot, garnished with fresh parsley for a burst of color and flavor.
