The key to this dish lies in selecting the right ingredients that bring out the best flavors without fuss. I always lean towards quality canned tomatoes—they’re the backbone of this sauce and worth investing in. Fresh garlic and basil keep the flavors bright, while a touch of cream or cream cheese rounds everything out with that luscious texture we all crave. Over the years, I’ve learned that simple, fresh ingredients make the biggest difference, especially when cooking with kids who aren’t always eager to try new things.

  • 12 ounces penne pasta (or your favorite short pasta)
  • 1 tablespoon olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1/2 teaspoon red pepper flakes (optional, for a little kick)
  • 1 (28-ounce) can crushed tomatoes
  • 2 cups vegetable or chicken broth
  • 1/2 cup heavy cream or cream cheese
  • Salt and pepper, to taste
  • Fresh basil leaves, for garnish
  • Grated Parmesan cheese, for serving (optional)

Instructions

  1. Set your Instant Pot to the sauté function and heat olive oil. Add minced garlic and cook for about 1 minute until fragrant, stirring constantly to prevent burning.
  2. Stir in dried oregano and red pepper flakes if using. Let them toast lightly for 30 seconds to release their aroma.
  3. Add the crushed tomatoes, broth, and a pinch of salt and pepper. Give everything a good stir to combine.
  4. Pour in the dry pasta, making sure it’s submerged in the liquid but don’t stir (to avoid sticking to the bottom).
  5. Seal the Instant Pot lid and set it to manual high pressure for 5 minutes. It will take a few minutes to come to pressure.
  6. Once the timer beeps, perform a quick release to release the pressure immediately.
  7. Open the lid carefully, stir the pasta gently to combine with the sauce.
  8. Stir in the heavy cream or cream cheese until the sauce is smooth and creamy. Adjust salt and pepper to taste.
  9. Serve immediately, garnished with fresh basil and a sprinkle of Parmesan cheese if you like.
