The key to this dish lies in selecting the right ingredients, ensuring each bite is as satisfying as the last. Growing up, my family always emphasized the importance of fresh produce and quality meats, and this recipe is no exception. Here’s what you’ll need:
- 4 cups diced potatoes
- 1 pound breakfast sausage
- 1 red bell pepper, diced
- 1 green bell pepper, diced
- 1 onion, chopped
- 4 eggs
- Salt and pepper to taste
- 1 tablespoon olive oil
- Optional: shredded cheese, fresh herbs for garnish
Feel free to substitute the sausage with turkey or vegetarian options, and mix up the veggies based on what’s in season or in your crisper drawer.
Instructions
- Heat the olive oil in a large skillet over medium heat. Add the sausage and cook until browned, breaking it into crumbles with a spatula, about 5-7 minutes.
- Remove the sausage from the skillet and set aside, leaving the drippings. Add the potatoes to the same skillet, cooking until golden brown and crispy, about 10-12 minutes.
- Add the onions and bell peppers to the skillet with the potatoes, sautéing until the vegetables are tender, approximately 5 minutes.
- Return the sausage to the skillet, stirring everything together. Season with salt and pepper to taste.
- Create four small wells in the hash and crack an egg into each well. Cover the skillet and cook until the eggs are set to your liking, roughly 3-5 minutes.
- Garnish with shredded cheese and fresh herbs, if desired, before serving.
