  2. In a mixing bowl, whisk together the maple syrup, Dijon mustard, apple cider vinegar, smoked paprika, garlic powder, salt, and pepper until well combined.
  3. Add the boneless chicken thighs to the bowl, turning to coat them thoroughly in the marinade. Let them sit for at least 15 minutes—if you have the time, an hour in the fridge deepens the flavour.
  4. Place the marinated chicken thighs on the prepared baking sheet, spacing them evenly.
