Ingredients
The key to this dish lies in selecting the right ingredients to build layers of flavour without fuss. I always reach for fresh garlic and good-quality chicken breasts or thighs (depending on your preference), as these form the backbone of the dish. The cheese tortellini can be store-bought, but if you have a favourite local brand, that’s even better—fresh pasta adds a delicate texture that elevates the meal. When it comes to the sauce, canned crushed tomatoes work beautifully here, but I always keep a few San Marzano tomatoes in my pantry for when I want something extra special.
- 2 tablespoons olive oil
- 3 garlic cloves, minced
- 1 pound boneless, skinless chicken breasts or thighs, cut into bite-sized pieces
- 1 teaspoon dried Italian seasoning
- 1/4 teaspoon red pepper flakes (optional, for a gentle kick)
- 1 cup heavy cream
- 1 can (14 oz) crushed tomatoes
- 1 package (9 oz) cheese tortellini, fresh or refrigerated
- 1/2 cup grated Parmesan cheese, plus extra for garnish
- Salt and freshly ground black pepper, to taste
- Fresh basil leaves for garnish (optional)
Instructions
- Heat the olive oil in a large skillet over medium-high heat. Add the minced garlic and sauté for about 1 minute until fragrant but not browned. This little step fills the kitchen with a comforting aroma that always makes me smile.
- Add the chicken pieces to the skillet, sprinkle with Italian seasoning, salt, pepper, and red pepper flakes if using. Cook, stirring occasionally, until the chicken is golden and cooked through, about 6-8 minutes.
- Pour in the crushed tomatoes and stir to combine. Let the mixture simmer for 5 minutes to develop those rich, tangy flavors.
- Reduce the heat to low and stir in the heavy cream and grated Parmesan cheese. Mix gently until the sauce is creamy and smooth.
- Add the cheese tortellini directly to the skillet, stirring carefully to coat them in the sauce. Cover and cook according to package instructions, usually about 3-5 minutes, until the tortellini are tender and heated through.
- Taste and adjust seasoning with extra salt and pepper if needed. Garnish with fresh basil leaves and an extra sprinkle of Parmesan before serving.
