The key to this dish lies in selecting the right ingredients—fresh, vibrant, and full of character. Whenever possible, I opt for high-quality olives and sun-dried tomatoes packed in olive oil; it makes a noticeable difference. Feta cheese should be crumbly and tangy, not rubbery or overly salty. And for the flatbread, you can use store-bought to save time or make your own if you’re feeling adventurous. - 2 flatbreads (store-bought or homemade, about 8 inches each)
- 3 tablespoons olive oil
- 1/2 cup crumbled feta cheese
- 1/4 cup sun-dried tomatoes, chopped
- 1/3 cup pitted Kalamata olives, halved
- 1 small red onion, thinly sliced
- 1 cup baby spinach or arugula
- 1 clove garlic, minced
- 1 teaspoon dried oregano
- Freshly ground black pepper, to taste
- Optional: a handful of pine nuts for garnish
Instructions
- Preheat your oven to 425°F (220°C). If you have a pizza stone, place it in the oven to heat; otherwise, a baking sheet works fine.
- Brush each flatbread lightly with olive oil on both sides to ensure a crisp base and golden color when baked.
- Arrange the flatbreads on the preheated stone or baking sheet. Bake for about 5 minutes until they start to puff slightly and become firm.
- Remove from oven and spread a thin layer of minced garlic evenly over each flatbread.
- Scatter the baby spinach or arugula over the garlic, then top with sun-dried tomatoes, Kalamata olives, red onion slices, and crumbled feta.
- Sprinkle dried oregano and freshly ground black pepper over each pizza.
- Return to the oven and bake for another 7-10 minutes, or until the edges are golden and the toppings are heated through.
- Remove from the oven and, if using, sprinkle pine nuts over the top for a lovely crunch.
- Slice and serve warm, watching as everyone dives in with big smiles (and maybe a little ketchup on the side, if you have little ones like mine!).
