- 1 pound flank steak or sirloin, sliced thinly
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 red onion, thinly sliced
- 1 cup cooked quinoa or couscous
- 1/2 cup crumbled feta cheese
- 1/4 cup kalamata olives, pitted and sliced
- Lemon wedges for serving
- Optional: fresh parsley for garnish
Instructions
- In a bowl, mix the olive oil, smoked paprika, oregano, salt, and pepper. Add the steak slices and coat them well. Let them marinate for at least 15 minutes.
- While the steak is marinating, prepare your vegetables and cook the quinoa or couscous according to package instructions.
- Heat a skillet over medium-high heat. Cook the steak slices for about 3-4 minutes on each side, until they are cooked to your liking. Remove from heat and let them rest.
