- 1 cup creamy peanut butter
- 8 oz cream cheese, softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup graham cracker crumbs
- 1/2 cup mini chocolate chips
- Pinch of salt
For a nut-free version, sunflower seed butter works wonders. And feel free to swap the graham cracker crumbs with crushed digestive biscuits for a taste of my homeland.
Instructions
- In a large mixing bowl, combine the peanut butter and softened cream cheese. Stir until smooth and creamy, about 2-3 minutes.
- Add the powdered sugar, vanilla extract, and a pinch of salt. Mix until fully incorporated and smooth.
- Fold in the graham cracker crumbs and mini chocolate chips, ensuring even distribution throughout the mixture.
- Chill the mixture in the refrigerator for about 30 minutes, or until it’s firm enough to handle.
- Once chilled, scoop tablespoon-sized amounts and roll them into balls. Place on a baking sheet lined with parchment paper.
- Refrigerate the balls for another hour to set completely before serving.
