- 8 small corn tortillas
- 1 lb (450g) lean ground beef or ground turkey
- 1 cup shredded sharp cheddar cheese
- 1 cup shredded Monterey Jack cheese
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 packet taco seasoning or 2 tablespoons homemade blend
- 1/2 cup salsa (store-bought or homemade)
- 2 tablespoons olive oil
- Fresh cilantro and lime wedges for garnish (optional)
Substitution tip: For a vegetarian version, replace the meat with 1 can of seasoned black beans or cooked lentils. Use vegan cheese to keep it dairy-free while maintaining that melty texture.
Instructions
- Preheat your oven to 375°F (190°C) and lightly grease a baking dish or line it with parchment paper.
- In a skillet over medium heat, warm the olive oil. Add the chopped onion and sauté until soft and translucent, about 3-4 minutes.
- Add the minced garlic and cook for another 30 seconds, until fragrant.
- Stir in the ground beef or turkey, breaking it up with your spoon. Cook until browned and cooked through, around 6-8 minutes.
- Drain any excess fat, then sprinkle the taco seasoning over the meat. Add salsa and stir well to combine. Let it simmer for 2-3 minutes to marry the flavors.
- Warm the tortillas briefly in the microwave or on a dry skillet to make them pliable.
- Fill each tortilla with a generous spoonful of the meat mixture, then fold or roll as preferred. Place them seam-side down in the baking dish.
- Sprinkle the shredded cheddar and Monterey Jack cheeses evenly over the tacos.
- Bake in the preheated oven for 12-15 minutes, or until the cheese is bubbly and golden brown.
- Remove from the oven and garnish with fresh cilantro and a squeeze of lime if you like. Serve immediately and enjoy!
