Ingredients
The key to this dish lies in selecting the right ingredients—fresh, simple, and high-quality. I always opt for whole milk when I can, as it gives the batter a lovely richness without heaviness. When it comes to flour, all-purpose works beautifully, but I sometimes swap in a bit of whole wheat for extra texture and nutrition. My mum always said, “Good ingredients make for good memories,” and I’ve carried that wisdom right into my cooking here.
- 1 cup all-purpose flour (or 3/4 cup all-purpose + 1/4 cup whole wheat flour)
- 2 tablespoons granulated sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup whole milk
- 1 large egg
- 2 tablespoons melted butter, plus extra for cooking
- 1 teaspoon vanilla extract
- 1/2 cup mix-ins (blueberries, chocolate chips, or small diced ham and shredded cheese for savory)
Instructions
- Preheat a non-stick skillet or griddle over medium heat and lightly grease with butter.
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the egg with the milk, melted butter, and vanilla extract until combined.
- Pour the wet ingredients into the dry and gently stir until just combined—don’t overmix; a few lumps are fine.
- Fold in your chosen mix-ins carefully to evenly distribute without deflating the batter.
- Using a tablespoon or small cookie scoop, drop batter onto the hot skillet in small rounds, about 1.5 inches in diameter.
- Cook for 1-2 minutes until bubbles form on the surface and the edges look set, then carefully flip and cook another 1-2 minutes until golden and cooked through.
- Remove from the skillet and keep warm while you finish the rest. Serve immediately with your favorite dips or toppings.
