The key to this dish lies in selecting the right ingredients, with quality and freshness taking center stage. I’ve learned that the simplest ingredients often make the most memorable meals, especially when they’re chosen with care.
- 1 pound large shrimp, peeled and deveined
- 8 ounces linguine or your favorite pasta
- 4 tablespoons unsalted butter
- 4 cloves garlic, minced
- 1/2 cup dry white wine or chicken broth
- 1 tablespoon lemon juice
- Salt and pepper to taste
- 1/4 cup chopped fresh parsley
- 1 loaf of French bread
- 2 tablespoons olive oil
- 2 teaspoons garlic powder
- 1/2 teaspoon dried oregano
Instructions
- Cook the pasta according to package instructions, then drain and set aside.
- While the pasta cooks, melt 2 tablespoons of butter in a large skillet over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
- Add the shrimp to the skillet, season with salt and pepper, and cook until pink, about 3 minutes on each side.
- Pour in the white wine and lemon juice. Let simmer for 2-3 minutes to let the flavors meld.
- Add the cooked pasta to the skillet, tossing to coat in the sauce. Stir in remaining butter and parsley.
- For the garlic bread, preheat your oven to 375°F. Cut the French bread in half lengthwise.
- Mix olive oil, garlic powder, and oregano, then brush over the bread halves. Bake for 10 minutes until golden and crispy.
- Serve the shrimp scampi in bowls with warm garlic bread on the side.
