- 12 ounces of shrimp, peeled and deveined
- 8 ounces of rice noodles
- 1 red bell pepper, sliced
- 1 cup of broccoli florets
- 3 tablespoons soy sauce
- 2 tablespoons sesame oil
- 1 tablespoon ginger, grated
- 2 cloves garlic, minced
- 1 tablespoon honey
- 1 tablespoon lime juice
- Optional: red pepper flakes for heat
Instructions
- Start by cooking the rice noodles according to package instructions. Drain and set aside.
- In a large skillet, heat the sesame oil over medium-high heat. Add the shrimp and cook until pink, about 2-3 minutes per side. Remove and set aside.
- In the same skillet, add garlic and ginger, sautéing until fragrant. Toss in the bell pepper and broccoli, cooking until just tender.
- Return the shrimp to the skillet. Add soy sauce, honey, lime juice, and optional red pepper flakes. Stir to combine.
- Gently fold in the cooked noodles, ensuring they’re well-coated with the sauce. Cook for another 2 minutes to heat through.
- Serve immediately, garnished with lime wedges if desired.
