Ingredients

Scale

Choosing quality ingredients is key to achieving that perfect balance in this Slow Cooker Honey Garlic Chicken. I always reach for fresh garlic and pure honey because their flavors shine through beautifully after slow cooking. When I first moved to the States, finding good honey was a small adventure itself—now, it’s a staple in my pantry. The chicken thighs I use are skinless and boneless for tenderness and ease, but you can adapt depending on what you have on hand.

  • 4 boneless, skinless chicken thighs
  • 1/3 cup honey (preferably raw or local)
  • 4 cloves garlic, minced
  • 1/4 cup soy sauce (low sodium if possible)
  • 2 tablespoons rice vinegar or apple cider vinegar
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon red pepper flakes (optional, for a subtle kick)
  • 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
  • Chopped green onions or sesame seeds for garnish (optional)

Instructions

  1. Place the chicken thighs in the slow cooker in a single layer for even cooking.
  2. In a small bowl, whisk together honey, minced garlic, soy sauce, vinegar, black pepper, and red pepper flakes if using.
  3. Pour the sauce mixture evenly over the chicken, making sure each piece is coated.
  4. Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender and cooked through.
  5. Once cooked, carefully transfer the chicken to a serving dish and cover to keep warm.
  6. Pour the remaining liquid into a small saucepan and bring to a simmer over medium heat.
  7. Stir in the cornstarch-water slurry and cook for 2-3 minutes, stirring constantly until the sauce thickens.
  8. Pour the thickened sauce over the chicken and garnish with chopped green onions or sesame seeds if desired.
