I always reach for fresh garlic and pure honey because their flavors shine through beautifully after slow cooking. The chicken thighs I use are skinless and boneless for tenderness and ease, but you can adapt depending on what you have on hand.
- 4 boneless, skinless chicken thighs
- 1/3 cup honey (preferably raw or local)
- 4 cloves garlic, minced
- 1/4 cup soy sauce (low sodium if possible)
- 2 tablespoons rice vinegar or apple cider vinegar
- 1/2 teaspoon black pepper
- 1/4 teaspoon red pepper flakes (optional, for a subtle kick)
- 1 tablespoon cornstarch mixed with 2 tablespoons water (for thickening)
- Chopped green onions or sesame seeds for garnish (optional)
Instructions
- Place the chicken thighs in the slow cooker in a single layer for even cooking.
- In a small bowl, whisk together honey, minced garlic, soy sauce, vinegar, black pepper, and red pepper flakes if using.
- Pour the sauce mixture evenly over the chicken, making sure each piece is coated.
- Cover and cook on low for 4 to 5 hours, or on high for 2 to 3 hours, until the chicken is tender and cooked through.
- Once cooked, carefully transfer the chicken to a serving dish and cover to keep warm.
- Pour the remaining liquid into a small saucepan and bring to a simmer over medium heat.
- Stir in the cornstarch-water slurry and cook for 2-3 minutes, stirring constantly until the sauce thickens.
- Pour the thickened sauce over the chicken and garnish with chopped green onions or sesame seeds if desired.
