- 3 cups cooked, shredded chicken (rotisserie works well)
- 8 ounces spaghetti, cooked al dente
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 can (10.5 ounces) cream of mushroom soup (or homemade white sauce)
- 1/2 cup sour cream or Greek yogurt
- 1/2 cup chicken broth
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1/2 teaspoon smoked paprika
- Salt and black pepper, to taste
- 2 tablespoons butter or olive oil
- Fresh parsley for garnish (optional)
Instructions
- Preheat your oven to 350°F (175°C). Lightly grease a 9×13 inch casserole dish.
- In a large skillet, melt butter over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes. Stir in minced garlic and cook for another minute until fragrant.
- In a mixing bowl, combine the cream of mushroom soup, sour cream (or Greek yogurt), chicken broth, smoked paprika, salt, and pepper. Mix well until smooth.
- Add the shredded chicken, cooked spaghetti, and half of the shredded cheeses to the sauce mixture. Fold gently to combine everything evenly.
- Transfer the mixture to the prepared casserole dish. Sprinkle the remaining cheese evenly on top.
- Bake uncovered for 25-30 minutes, or until the cheese is golden and bubbly. Keep an eye on it after 20 minutes to prevent over-browning.
- Remove from oven and let it rest for 5 minutes before serving. Garnish with fresh parsley if desired.
