Instructions
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper and spread out the cubed sweet potatoes. Roast for about 25-30 minutes, turning halfway through, until tender and caramelized at the edges.
- Transfer the roasted sweet potatoes to a large mixing bowl. Add the melted butter, maple syrup, milk, vanilla extract, cinnamon, nutmeg, and salt. Mash everything together until smooth but still slightly textured.
- Spread the sweet potato mixture evenly into a greased 9×13-inch baking dish.
- In a small bowl, combine the chopped pecans and brown sugar (if using). Sprinkle this mixture generously over the top of the sweet potatoes.
