- 1 pound flank steak, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 large onion, thinly sliced
- 2 cups shredded Monterey Jack cheese
- 8 flour tortillas
- 2 tablespoons butter, divided
Instructions
- In a large skillet over medium heat, add olive oil and cook the steak slices with salt and pepper until browned, about 4-5 minutes. Remove and set aside.
- In the same skillet, add the sliced bell peppers and onion. Cook until they are soft and slightly caramelized, roughly 6-8 minutes.
- Lay out the tortillas and evenly distribute the cooked steak, peppers, onions, and cheese onto one half of each tortilla.
- Fold the tortillas in half over the filling.
- In a clean skillet, melt 1 tablespoon of butter over medium heat. Place a folded tortilla in the skillet and cook until the cheese is melted and the tortilla is golden brown, about 3 minutes per side. Repeat with remaining tortillas.
