  • 1 pound flank steak, thinly sliced
  • 1 tablespoon olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 red bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 large onion, thinly sliced
  • 2 cups shredded Monterey Jack cheese
  • 8 flour tortillas
  • 2 tablespoons butter, divided

Instructions

  1. In a large skillet over medium heat, add olive oil and cook the steak slices with salt and pepper until browned, about 4-5 minutes. Remove and set aside.
  2. In the same skillet, add the sliced bell peppers and onion. Cook until they are soft and slightly caramelized, roughly 6-8 minutes.
  3. Lay out the tortillas and evenly distribute the cooked steak, peppers, onions, and cheese onto one half of each tortilla.
  4. Fold the tortillas in half over the filling.
  5. In a clean skillet, melt 1 tablespoon of butter over medium heat. Place a folded tortilla in the skillet and cook until the cheese is melted and the tortilla is golden brown, about 3 minutes per side. Repeat with remaining tortillas.
