- 8 eggroll wrappers
- 1 cup cream cheese, softened
- 1/4 cup granulated sugar
- 1 teaspoon vanilla extract
- 1/2 cup strawberries, finely chopped
- 1 tablespoon lemon juice
- Vegetable oil, for frying
- Powdered sugar, for dusting
- Optional: chocolate sauce or strawberry jam for dipping
Instructions
- In a bowl, mix together the cream cheese, sugar, and vanilla extract until smooth and creamy.
- Add the chopped strawberries and lemon juice, gently folding them into the cream cheese mixture.
- Lay an eggroll wrapper on a clean surface. Spoon about 2 tablespoons of the cheesecake mixture onto the center.
- Fold the bottom corner over the filling, then fold in the sides, and roll tightly. Seal the edge with a bit of water.
- Heat vegetable oil in a pan to 350°F. Fry the eggrolls in batches until golden brown, about 2-3 minutes per side.
- Remove with a slotted spoon and drain on paper towels. Dust with powdered sugar before serving.
