Ingredients
The key to this dish lies in selecting the right ingredients that balance creaminess and crispiness. When I make Stuffed Mashed Potato Nests, I always reach for starchy potatoes like Russets because they mash beautifully and hold their shape well. Fresh herbs and good-quality cheese make a world of difference, too—I often use sharp cheddar or a blend with mozzarella for that gooey pull. If you’re short on time, leftover mashed potatoes work wonders, which is a little life-saver in my busy kitchen with two little ones.
- 4 cups mashed potatoes (preferably homemade with butter and cream)
- 1 cup shredded sharp cheddar cheese, divided
- 1/2 cup cooked bacon bits or diced ham (optional)
- 1/4 cup chopped green onions or chives
- 1 large egg, lightly beaten
- 1/2 teaspoon garlic powder
- Salt and freshly ground black pepper, to taste
- 2 tablespoons all-purpose flour (to help bind)
- Olive oil or melted butter, for brushing
- Optional fillings: sautéed mushrooms, steamed broccoli, or cooked spinach
Instructions
- Preheat your oven to 400°F (200°C) and lightly grease a muffin tin with butter or oil.
- In a large bowl, combine the mashed potatoes, ½ cup of shredded cheddar, egg, flour, garlic powder, salt, and pepper. Mix gently until everything is just combined—overmixing can make the nests dense.
- Take about ¼ cup of the potato mixture and press it into the bottom and up the sides of each muffin cup to form a nest shape.
- Spoon your choice of fillings into the center of each nest. I love a mix of bacon bits and green onions, but sautéed mushrooms or spinach work beautifully too.
- Top each nest with the remaining shredded cheddar cheese.
- Brush the edges of the nests with olive oil or melted butter to encourage a golden, crispy crust.
- Bake for 20-25 minutes until the edges are golden brown and the cheese is bubbly and slightly browned.
- Let the nests cool in the pan for about 5 minutes before carefully removing. Serve warm for the best texture and melty cheese experience.
