Learn how to make delicious Balsamic Soy Roasted Garlic Mushrooms. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 1 pound (about 450 grams) of fresh cremini or button mushrooms, stems removed or left on for extra flavor
  • 4 cloves garlic, peeled and smashed
  • 3 tablespoons balsamic vinegar
  • 2 tablespoons soy sauce (or tamari for gluten-free option)
  • 2 tablespoons olive oil or melted coconut oil
  • 1 teaspoon honey or maple syrup (optional, for a touch of sweetness)
  • 1 teaspoon dried thyme or rosemary (fresh herbs work beautifully too, if you have them)
  • Salt and freshly ground black pepper, to taste
  • Fresh parsley or basil for garnish (optional)

If you’re like me and love experimenting, you can try substituting the soy sauce with coconut aminos for a soy-free version. I’ve also added a dash of smoked paprika sometimes for a smoky twist, which pairs beautifully with the earthy mushrooms.

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or a silicone baking mat for easy cleanup. I remember helping my grandma prepare her baking sheets—those little moments of learning and bonding are priceless.
  2. Clean the mushrooms gently with a damp cloth or paper towel. If you prefer, you can leave the stems on for extra flavor, or remove them if you want a more uniform look. Place the mushrooms in a large mixing bowl.
  3. In a small bowl, whisk together the balsamic vinegar, soy sauce, olive oil, honey (if using), garlic, and herbs. I love using fresh garlic when I have it, but minced garlic from a jar works just as well—my grandma always said, “Use what you’ve got and make magic.”
  4. Pour the marinade over the mushrooms and toss gently until all pieces are evenly coated. Don’t be afraid to get your hands in there—cooking is a tactile experience that I cherish. Let the mushrooms sit in the marinade for at least 10 minutes to absorb the flavors.
  5. Arrange the mushrooms on the prepared baking sheet in a single layer, ensuring they aren’t overcrowded. This helps them roast evenly and develop that beautiful caramelization.
  6. Roast in the preheated oven for 20-25 minutes, flipping halfway through. Keep an eye on them; you want the mushrooms to be tender and slightly browned around the edges. I’ve learned from years of cooking that patience and attention make all the difference.
  7. Once done, remove from the oven and sprinkle with freshly chopped parsley or basil for a burst of freshness. Serve hot, or let them cool slightly if you’re adding them to salads or grain bowls.

One of my favorite ways to enjoy these mushrooms is spooned over creamy polenta or tucked into warm crusty bread with a smear of goat cheese. The flavors are so layered and comforting—like a warm hug from my grandma’s kitchen.
