Learn how to make delicious Bang Bang Chicken Skewers. Easy recipe with step-by-step instructions.

Ingredients

Scale

When I cook, I like to keep things straightforward, just like my grandma did. I’ve found that fresh ingredients and a handful of pantry staples are all you need to create something truly delicious. Here’s what you’ll need:

  • 1 pound boneless, skinless chicken breasts or thighs, cut into 1-inch cubes
  • 2 tablespoons soy sauce (or tamari for gluten-free option)
  • 1 tablespoon rice vinegar
  • 2 teaspoons sesame oil
  • 1 teaspoon garlic powder
  • 1 teaspoon ginger powder (or freshly grated ginger)
  • Salt and pepper to taste
  • Skewers (wooden or metal; if using wood, soak in water for 30 minutes)

For the sauce:

  • 1/2 cup mayonnaise (or Greek yogurt for a lighter version)
  • 2 tablespoons sweet chili sauce (adjust to taste)
  • 1 tablespoon sriracha (or more if you like it spicy)
  • 1 teaspoon honey or maple syrup
  • 1 teaspoon rice vinegar
  • Optional: chopped scallions and sesame seeds for garnish

Tip: I sometimes swap out the chicken for tofu or shrimp, experimenting with what’s fresh and available. I’ve found that the marinade works well on all proteins, giving each a wonderful flavor profile.

Instructions

  1. Start by preparing the marinade. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, garlic powder, ginger powder, salt, and pepper. Place the chicken pieces in a large zip-top bag or shallow dish and pour the marinade over them. Toss well to coat. Let marinate in the fridge for at least 30 minutes, or up to 2 hours for deeper flavor.
  2. While the chicken marinates, prepare the sauce. In a small bowl, combine mayonnaise, sweet chili sauce, sriracha, honey, and rice vinegar. Mix until smooth. Taste and adjust the spice level or sweetness as desired. Refrigerate until ready to serve.
  3. Preheat your grill or grill pan over medium-high heat. If you’re using wooden skewers, remember to soak them in water for at least 30 minutes to prevent burning.
  4. Thread the marinated chicken cubes onto the skewers, leaving a little space between each piece for even cooking.
  5. Place the skewers on the hot grill. Cook for about 4-5 minutes per side, turning occasionally, until the chicken is golden brown and cooked through (internal temperature should reach 165°F). I’ve found that basting with a little extra marinade during grilling keeps the meat juicy and flavorful.
  6. Once cooked, transfer the skewers to a serving platter. Drizzle generously with the prepared sauce, and sprinkle with chopped scallions and sesame seeds if desired.
  7. Serve immediately with extra sauce on the side for dipping. The aroma alone will draw everyone to the table!

From my own experience, I like to keep a close eye on the chicken while grilling—these skewers cook quickly, and I’ve learned the importance of not rushing the process. Patience and attention really pay off in that perfect balance of crispy exterior and tender interior.
