  • 3 large sweet potatoes, peeled and cut into 1-inch cubes
  • 12 slices of thick-cut bacon
  • 1/4 cup brown sugar
  • 1/4 cup maple syrup
  • 1 tablespoon olive oil
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Wooden or metal skewers

If you’re unable to find thick-cut bacon, regular bacon will work too—just keep an eye on it as it cooks to prevent burning. For a vegetarian twist, try substituting the bacon with marinated tofu or tempeh.

Instructions

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to make cleanup easier.
  2. In a large bowl, combine the sweet potato cubes, brown sugar, maple syrup, olive oil, cinnamon, smoked paprika, salt, and pepper. Toss well to ensure the sweet potatoes are evenly coated.
  3. Spread the sweet potatoes onto the prepared baking sheet in a single layer. Roast in the preheated oven for about 20 minutes, or until the sweet potatoes are just tender.
  4. While the sweet potatoes are roasting, cut the bacon slices into thirds.
  5. Once the sweet potatoes have cooked, allow them to cool slightly. Thread a piece of sweet potato onto a skewer, followed by a piece of bacon. Repeat until the skewer is filled, leaving a little space at each end for handling. Repeat with remaining ingredients.
  6. Return the skewers to the oven and bake for an additional 15-20 minutes, or until the bacon is crispy and the sweet potatoes are caramelized.
  7. Remove from the oven and let them cool for a few minutes before serving.

These skewers can also be grilled if you prefer that smoky, outdoor flavor. Just be sure to soak wooden skewers in water for 30 minutes before grilling to prevent burning.
