  • 2 large apples, peeled and diced
  • 1 tablespoon unsalted butter
  • 1/4 cup brown sugar
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • 1 package puff pastry (thawed)
  • 1 egg, beaten (for egg wash)
  • 1/4 cup granulated sugar (optional, for dusting)

Feel free to substitute the apples with pears or even peaches if you’re in the mood for experimenting. The puff pastry can also be swapped with homemade dough if you’re feeling ambitious, just like my grandma used to do on special occasions.

Instructions

  1. Preheat your waffle iron to medium-high heat, and grease it lightly with butter or cooking spray.
  2. In a skillet over medium heat, melt the butter and add the diced apples. Cook until they begin to soften, about 5 minutes.
  3. Add the brown sugar, cinnamon, and vanilla extract to the skillet. Stir to combine and cook until the apples are caramelized and syrupy, about 10 more minutes. Remove from heat and let cool slightly.
  4. Roll out the puff pastry on a lightly floured surface and cut into squares of about 4 inches.
  5. Spoon a generous amount of the apple mixture onto the center of each pastry square.
  6. Fold the pastry over the filling to create a triangle, and press the edges to seal. You can use a fork to crimp the edges for a decorative touch.
  7. Brush the tops of the pastries with the beaten egg, and sprinkle with granulated sugar if desired for an extra crunch.
  8. Carefully place each pastry into the preheated waffle iron. Cook for about 6-8 minutes, or until the pastry is golden brown and crispy.
  9. Remove from the waffle iron and let cool for a few minutes before serving. Enjoy the warm, gooey goodness!
