Learn how to make delicious Cheesy Baked Chicken Breast and Peppers. Easy recipe with step-by-step instructions.

Ingredients

Scale

  • 4 boneless, skinless chicken breasts (about 6 ounces each)
  • 2 large bell peppers (preferably one red and one yellow for color), sliced
  • 1 cup shredded mozzarella cheese (or a blend of your favorite cheeses)
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 teaspoon dried thyme (optional, for added flavor)
  • Fresh parsley, chopped (for garnish)

For a little extra flavor, I often sprinkle a pinch of crushed red pepper flakes or a squeeze of fresh lemon over the dish right before serving. I’ve found that a little zing can elevate the whole meal, reminiscent of those simple yet flavorful dishes my grandma used to make with such love.

Instructions

  1. Preheat your oven to 400°F (200°C). Lightly grease a baking dish or line it with parchment paper for easy cleanup.
  2. In a small bowl, combine olive oil, minced garlic, oregano, smoked paprika, salt, pepper, and thyme if using. Mix well.
  3. Pat the chicken breasts dry with paper towels. Rub each piece generously with the olive oil mixture, ensuring they’re well coated on all sides.
  4. Place the chicken breasts in the prepared baking dish. Arrange the sliced peppers around and on top of the chicken.
  5. Sprinkle the shredded cheese evenly over the chicken breasts and peppers. I like to cover the dish loosely with foil for the first 20 minutes to keep the cheese from browning too quickly, then remove it to allow the cheese to melt and turn golden during the last 10 minutes.
  6. Bake in the preheated oven for about 30-35 minutes, or until the chicken reaches an internal temperature of 165°F and the cheese is bubbly and golden.
  7. Once out of the oven, let it rest for a few minutes. Garnish with freshly chopped parsley and a squeeze of lemon if you like a little tang. Serve hot and enjoy the comforting flavors that remind me so much of my grandma’s love in every bite.
