  • 12 lasagna noodles (preferably no-boil for convenience, or traditional dried pasta cooked al dente)
  • 1 pound (450g) ground beef or turkey (substitute with plant-based crumbles if desired)
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 24 oz (680g) marinara sauce or homemade tomato sauce
  • 15 oz (425g) ricotta cheese (for a creamier, richer texture, you can substitute with cottage cheese)
  • 2 cups shredded mozzarella cheese (the star of the show, the more, the better)
  • 1/2 cup grated Parmesan cheese
  • 2 large eggs (to bind the ricotta mixture)
  • 2 tablespoons chopped fresh basil or parsley (optional but adds a fresh flavor)
  • Salt and freshly ground black pepper, to taste
  • Olive oil for sautéing

For a little variety, I like to add sautéed spinach or mushrooms to the layers — it’s a simple way to sneak in some greens and deepen the flavor. If you’re gluten-free, you can use gluten-free lasagna noodles or even thin slices of zucchini for a lighter, vegetable-based version. My philosophy is to adapt and make it your own — just like grandma would have wanted.

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish with olive oil or non-stick spray.
  2. Cook the lasagna noodles if using traditional dried pasta — boil in salted water until al dente, then drain and set aside. If using no-boil noodles, skip this step and proceed to assemble.
  3. In a large skillet, heat a tablespoon of olive oil over medium heat. Add chopped onion and sauté until translucent, about 5 minutes. Add garlic and cook for another minute until fragrant. Stir in the ground meat, season with salt and pepper, and cook until browned, about 8-10 minutes. Drain excess fat if necessary.
  4. Pour in the marinara sauce and simmer for 5 minutes, allowing the flavors to meld. Remove from heat and set aside.
  5. In a separate bowl, combine ricotta cheese, eggs, chopped herbs, and a pinch of salt and pepper. Mix until smooth and creamy. I like to add a little grated Parmesan here for extra flavor.
  6. Start layering your lasagna: spread a thin layer of meat sauce at the bottom of the prepared dish. Place a layer of noodles over the sauce, slightly overlapping if needed. Spread half of the ricotta mixture over the noodles, then sprinkle with a generous handful of shredded mozzarella.
  7. Repeat the layers: sauce, noodles, ricotta, mozzarella. Finish with a final layer of noodles topped with remaining meat sauce and a hefty sprinkle of mozzarella and Parmesan cheese.
  8. Cover the dish with foil and bake in the preheated oven for 25 minutes. Remove the foil and bake for an additional 10-15 minutes, or until the cheese is bubbly and golden brown.
  9. Let the lasagna rest for at least 10 minutes before slicing. This helps the layers set and makes serving much easier. I often prepare this the night before — it tastes even better after a little rest in the fridge!

My personal tip: for that extra stretchiness and gooeyness, I love to add an extra handful of mozzarella on top during the last few minutes of baking. Watching the cheese melt and bubble is always a highlight — it’s pure comfort in cheesy form.
